Toffee Apple Pancakes
Recipe for delicious pancakes cooked with a toffee apple sauce. Perfect for an indulgent breakfast or for a pudding.
Make these pancakes in advance of your camping trip or make the mixture beforehand and cook on the camping stove onsite to make your life easier.
This recipe makes enough for 2-4 people, depending on your appetite.
Ingredients
Pancakes
100g plain flour
1 ½ tsp baking powder
150 ml milk
1 egg
1 tbsp melted butter
Oil/butter for cooking
For the toffee apple sauce
1 sharp eating apple
75g butter
75g brown sugar
2 tbsp golden or maple syrup (I take the squeezy bottle camping, less messy)
Pinch of sea salt

Method:
1: Tip the dry ingredients for the pancakes into a jug and add the egg, start to beat together adding the milk slowly. This should minimise any lumps forming.
2: Meanwhile heat the frying pan over a medium heat with a couple of drops of oil/knob of butter.
3: Pour 3-4 tablespoons of batter into the pan for each pancake, you should be able to fit 3-4 pancakes into the pan at the same time, depending on the size of your pan of course.
4: When the pancakes start to bubble flip over and cook the other side for 30 seconds or so. Stack your pancakes between two plates to keep warm.
5: Now for the toffee apple sauce… Core the apple and slice (peel it also if you prefer, I prefer to keep the peel to add colour), and tip into the pan with melted butter.
6: Add the sugar and syrup over a medium heat stirring occasionally. When the apple slices are golden, the sugar dissolved and the pinch of salt and stir to ensure all the apple slices are coated in the caramel.
7: Divide the pancakes between the hungry hordes and tip over the toffee apple sauce, add cream or crème fraiche and tuck in!
